• 1/2 cup Unsweetened Cocoa Baking Powder
  • 2 1/2 cup Plain Flour
  • 1 3/4 cup White Sugar
  • 1/2 tsp Salt
  • 1 cup firmly packed Freshzest Basil – Green
  • 1/2 cup Silken Tofu
  • 1 cup Soy Milk
  • 1 tbs Apple Cider Vinegar
  • 1 tbs Vanilla Extract
  • 1/2 cup Olive Oil
  • 1/2 cup Water

Serving Size: 18 small cupcakes

  1. Preheat oven to 180 degrees celcius. In a large mixing bowl, place cocoa powder, flour, sugar, salt and mix well.
  2. In a food processor, place the basil and process until finely chopped. Add the tofu, soy milk, vinegar, vanilla extract, oil and process until smooth.
  3. Combine the 2 mixes together and add the 1/2 cup of water. Stir and combine thoroughly.
  4. Fill cupcake liners 3/4 full and place in oven. Bake for 25 minutes, serve immediately.
