• 1 cup Milk
  • 2 cups Whipping Cream
  • 7 Sprigs Freshzest Thyme - savoury
  • 6 Egg Yolks
  • 1 cup Caster Sugar
  • 1 tsp Honey

Thyme Ice Cream.


Preparation Time: 1 hour + Cooling and freezing

Cooking Time: 10 Minutes

Serving Size: 1 small ice cream container

  1. In a medium saucepan place milk, 1 cup of cream and thyme sprigs. Heat to just under boiling, remove from heat, cover and cool for approximately 40 minutes.
  2. Remove thyme sprigs from mixture. In a separate mixing bowl, place eggs, sugar and honey and whisk until combined. Add the egg mixture and remaining cream to the cooled cream mixture and combine well. Return mixture to a medium heat and stir constantly until it thickens slightly and all sugar has dissolved (ensure you scrape the bottom to stop it from burning). Remove from heat, place in a bowl and place in fridge overnight.
  3. Place mixture in an ice cream machine and freeze to manufacturers instructions. Freeze for a further 6 hours and serve.
