• 1 sheet puff pastry, defrosted
  • half sweet potato, peeled and diced roughly into 1cm cubes
  • 6 eggs
  • 1/4 cup milk
  • 1/2 punnet Freshzest Chives
  • salt and pepper
  • 80g smoked salmon, torn or chopped
  • 1/4 cup grated cheese

Smoked Salmon, Sweet Potato and chive Quiche .


Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serving Size: 6

  1. Preheat the oven to 180 degrees celsius
  2. Press the puff pastry into a quiche pan and blind bake for 15 minutes. (It is good to make your own pastry but the commercial sheets are quicker)
  3. Place sweet potato into a microwave-safe container and cook on high for two minutes.
  4. Place the eggs, milk, chives and salt and pepper into a large bowl and whisk.
  5. Remove the pastry from the oven and spread the sweet potato, smoked salmon and cheese evenly across the pastry.
  6. Pour the egg mixture gently over the top and bake for 20 minutes or until egg has set.
  7. Serve immediately with salad greens and garnished with chives
