• 500gm potato, coarsely grated and drained in a fine sieve
  • 1 small onion, very finely chopped
  • 1 egg
  • salt and pepper
  • 30g flour
  • 1 punnet Freshzest Dill, chopped

Potato Latki.

  1. Place drained potato in a bowl. Add chopped onion, egg, salt and pepper, chopped dill and flour. Mix well.
  2. Oil a frying pan or BBQ plate. Place a tablespoon of the mixture in the hot pan or plate and pat out a little.
  3. Cook until golden, turn pressing a little. Place on a wire rack in the oven while you cook the remaining latki.
  4. Serve hot, topped with sour cream, and slices of smoked salmon or gravalax of salmon.
