• Olive Oil, to grease
  • 1 500g packet of Laucke's Foccachia/Pizza Dough Mix
  • 1 Large Desiree (Red) Potato, unpeeled and cut using a mandolin into thin chip size pieces
  • 3 Sprigs Freshzest Rosemary
  • Extra Virgin Olive Oil
  • Sea Salt Flakes

Potato and Rosemary Focaccia.


Preparation Time: 1 Hour

Cooking Time: 20-30 Minutes

Serving Size: 1 Large Loaf

  1. 20x30cm slice pan with oil to lightly grease. Combine the bread mixture according to the instructions on the packet. Steps 1 through to 6 (until you end up with a dough). Spread this dough as evenly as you can cross the pan.
  2. Using a knife, make a few small incisions as wide as the potato pieces at length and insert potato as you go. Then insert small rosemary sprigs at even intervals over the load. Once the whole loaf is covered with potato and Rosemary, drizzle Olive oil over loaf and garnish top with Sea Salt.
  3. Bake in oven for 20-30 minutes or until foccacia is golden and a skewer inserted into the centre comes out clean. Remove from oven. Remove Focaccia from pan and serve warm.
