• 4 punnets Freshzest Basil – Green
  • 100ml olive oil
  • 3 large cloves garlic, chopped
  • 100gm pinenuts
  • 1/2 teaspoon salt
  • 50gm parmesan, grated
  • 15ml milk, soured with a dash of lemon juice
  • black pepper, to taste

Pesto.

  1. Place basil, garlic, pinenuts and salt in a food processor. Chop and while the blade is going, add the oil. Stir in parmesan and soured milk.
  2. Add a generous grinding of pepper and adjust the seasoning to taste.
  3. Great with pasta or can be used to make a pesto dip. Also good to add to an oil and vinegar dressing.
