• 1 tblspn Freshzest Parsley, Finely Chopped
  • 1 tsp Freshzest Thyme - savoury, Finely Chopped
  • 3 Eggs
  • 3 tblspn Water or Milk, (if you want a creamier texture choose milk)
  • 2 tsp Butter
  • 4 Cherry Tomatoes, Halved
  • 1 Mushroom, Thinly Sliced
  • Season Salt and Pepper, (Optional)
  • Sprinkle Parmesan Cheese, Grated (Optional)
  • Other Vegetables or Meats, finely sliced (Optional)

Parsley and Thyme Omelette.

  1. Place Parsley, Thyme, Eggs, Water/Milk into a screw top jar and shake to mix thoroughly.
  2. Preheat non-stick frying pan to medium-high heat. Season pan with butter and wait until the butter has gone Golden Brown.
  3. Tip in Egg Mix and rotate pan, spreading egg mix as much as possible. Reduce heat to medium-low. Sit on heat for 1 minute. Gather sides to center and spread remaining egg mix evenly on the exposed pan. Place Tomatoes and Mushroom (Or other ingredients of your choice) on the Omelette and allow to sit on heat until egg mix has set.
  4. Tip pan and roll Omelette on itself. Serve with a garnish of fresh herbs.
