• 5 Handfuls Sourdough Bread

  • 7 tbsp Red Wine Vinegar

  • 1 Medium Cucumcber, Coin Shaped cuts
  • 1 Medium Red Onion
  • 6 Vine Tomatoes
  • 3 Garlic Cloves
  • Handful Basil Leaves, Torn

  1. Put the bread in a large mixing bowl, add half of the red wine vinegar, olive oil, salt and pepper to taste.
  2. Remove the tomato skins by blanching them. Dice tomatoes to 2 or 3 cm dice size and add to bowl along with the cucumber and red onion. Add the finely chopped garlic and a pinch of salt. Mix well.
  3. Add the remaining red wine vinegar and the basil leaves and mix. Serve.
