• 600g Beef Fillet, thinly sliced
  • 2 tsp Lemon Zest, finely grated
  • 2 Limes, juiced
  • 1 tbs Palm Sugar
  • 1 large Garlic Clove, crushed
  • 10cm stick Freshzest Lemongrass, finely chopped
  • 1 small Birds eye Chilli, finely chopped
  • 2cm piece Ginger, grated
  • 1/4 cup Peanut Oil
  • 1 large Red Capsicum, thinly sliced
  • 1 medium Carrot, cut into matchsticks
  • 1 1/2 cups loosely packed Freshzest Mint
  • 1 1/2 cups loosely packed Freshzest Coriander

Vietnamese Marinated Beef Salad.


Preparation Time: 1 hour and 20 minutes

Cooking Time: 5-10 Minutes

Serving Size: 6 as a side

  1. In a medium sized mixing bowl combine beef, lime zest, lime juice, fish sauce, palm sugar, garlic, ginger, lemon grass, chilli and 2 tbs of oil. Cover and refrigerate for at least 1 hour.
  2. Heat the remaining oil in a wok and stir fry the beef, 1/4 of the amount at a time, until browned.
  3. Combine beef with the remaining ingredients in a salad bowl and serve.
