- 2 cups cold cooked chicken, chopped
- 1/2 cup best quality mayonnaise
- 1 tbsp Freshzest Tarragon, finely chopped

- 1 tbsp Freshzest Chives, finely chopped

- 2 tsp white balsamic or white wine vinegar
- sea salt

- fresh bread (white, rye or sourdough are best)
- unsalted butter
Little Tarragon, Chive & Rocket Chicken Sandwiches.
- Combine chicken, chopped herbs, mayonnaise & vinegar in a bowl, and season to taste.
- Butter bread generously, spread on some chicken mixture, then place a few leaves of rocket on top and finish with the other slice of bread. (Amounts vary depending on the size of your bread/sandwiches)
- If your bread is regular sliced, remove crusts and cut into fingers, small triangles or small squares. If you are using sourdough, leave the crunchy crusts on and cut them in a more of a rustic fashion.
These elegant sandwiches are great for morning tea, parties, picnics, school/work lunches.
