• 2 big handfuls Freshzest Parsley - Continental, roughly chopped
  • 1kg Carrots, sliced length ways to about 1/2 cm thick
  • 3-4 tbs Extra Virgin Olive Oil
  • 1 bunch Celery, inner stems and leaves only, coarsely chopped
  • 1/2 cup Kalamata olives, Pitted and roughly chopped
  • 1/4 tsp Dried Chilli Flakes
  • 1/2 tsp Ground Caraway Seeds
  • 250g Feta, Crumbled

Grilled Carrot Salad.


Preparation Time: 15 Minutes

Cooking Time: 10 Minutes

Serving Size: 6

  1. Preheat barbecue hot plate to hot. Place the chopped carrots in a bowl and cover with olive oil, toss. Grill carrots until tender. Remove carrots and place aside to cool. When cool, cut into strips. Place all ingredients except feta in a bowl and then crumble feta over the top. Serve.
