• 200g Green Beans, Topped and Tailed
  • 2 tbs Olive Oil
  • 1 tbs Lemon Juice
  • 2 tbs White Wine Vinegar
  • 4 Medium Tomatoes, Cut into Wedges
  • 4 Hard Boiled Eggs, Quartered
  • 425g Canned Tuna in Springwater, Drained and Flaked
  • 1/2 Cup Caperberries, Rinsed and Drained
  • 1/2 Cup Deseeded Black Olives
  • 1/4 Cup firmly packed Freshzest Parsley - Continental
  • 440g Canned Whole Baby Potatoes, Drained, Rinsed and Halved

Green Bean and Tuna Salad with parsley.

  1. Prep ingredients. Boil Green Beans until just tender then quickly drain and cool under cold water.
  2. Place oil, juice and vinegar in a salad bowl and mix thoroughly. Add beans and the rest of the ingredients, toss gently. Serve.
