• 1/4 cup extra virgin olive oil
  • 1 tbs lemon juice
  • 1 tbs white wine vinegar
  • 1 tbs Freshzest Oregano, finely chopped
  • 1 garlic clove, finely chopped
  • 3 medium sized tomatoes, cut into wedges
  • 3 small to medium sized Lebanese cucumbers, cut into 2cm cubes
  • 1/2 medium sized red onion, thinly sliced
  • 1/2 cup black kalamata olives, deseeded
  • 100g fetta cheese, roughly chopped
  • 1/2 large red capsicum, thinly sliced

  1. Place oil, juice, oregano, vinegar and garlic in a large bowl and mix thoroughly.
  2. Combine the dressing and the rest of the ingredients in a large bowl. Serve.
