• 4 cups Freshzest Mint, roughly chopped
  • 2 cups thickened cream
  • 8 cups strawberries, topped and halved
  • 1/2 cup sugar

Fresh Strawberries with Mint Whipped Cream.


Preparation Time: 20 Minutes

Cooking Time: 5 minutes

Serving Size: 8

  1. Place mint, sugar and 2 tbs of water into a medium saucepan and bring to the boil for 2 minutes over a medium heat. Remove from the heat and allow to cool for 15 minutes. Strain mixture and squeeze solids to remove as much liquid as possible. Throw away solids and allow liquid to cool.
  2. In a large bowl, whip the cream until stiff peaks form. Fold through mint mix and if necessary, you can whip the cream again.
  3. Serve.
