• 2 Avocado's, Ripe, Halved, Stones removed and peeled
  • 1 1/2 Small Red Onion, Finely Chopped
  • 3 Tomato, Ripe and finely chopped
  • 2 1/2 Garlic Cloves, Crushed
  • 1 Small Fresh Red Chilli, Deseeded and finely chopped
  • 2 tbs Fresh Lime Juice
  • 5 tbs Freshzest Coriander, Chopped
  • Salt and Pepper
  • 1 tbs Olive Oil
  • 1/2 Brown Onion, Finely Chopped
  • 2 tsp Ground Cumin
  • 1/2 tsp Ground Coriander
  • 200g Can Red Kidney Beans, Salt Reduced, Drained and Rinsed
  • 2/3 Cup Cold Water
  • 1 Long Green Chilli, Deseeded and finely chopped
  • Juice of 1/2 a Lemon
  • 1/2 tsp Caster Sugar
  • 100g Original Corn Chips
  • 4 tbs Light Sour Cream
  • Garnish Coriander Leaves

  1. Place Avocado’s in a medium sized mixing bowl and mash using a fork. Add to that 1 small red Onion (finely chopped), 1 ripe Tomato (finely chopped), 2 Garlic Cloves (chopped and crushed) 1 Small Red Chilli (Deseeded and finely chopped), 2 tbs Fresh Lime Juice, 2 tbs fresh Coriander leaves (chopped), Salt and pepper to taste. Mix thoroughly.
  2. Heat olive oil in a saucepan over medium heat. Add brown onion and cook for 3 minutes or until softened. Add 1/2 Garlic clove (chopped and crushed), ground cumin and ground Coriander. Cook and stir for just under a minute or until fragrant and add red Kidney beans (Drained and Rinsed) and 1/3 cup of Cold water. Cook uncovered for 5-10 minutes or until cooked through. Remove from heat and cool slightly. (Optional: Transfer to heatproof bowl and mash using a potato masher.) Season with Salt and Pepper.
  3. Cut a cross across the bottom of 2 tomato skins and remove the core with a sharp vegetable knife. Boil water in a saucepan and place tomato in, remove saucepan from the heat and leave for 3 minutes. Lift out tomato with a slotted spoon and plunge into iced water. Remove the skins, slice in half and remove seeds. Dice and place in a bowl. Add 1/2 Red onion (finely chopped), 1 long green chilli (Deseeded and finely chopped), juice of half a lemon, 2 tablespoons of Coriander (Finely chopped) and caster sugar. Combine.
  4. Serve the 3 above mixtures with Corn Chips and Sour Cream.
