• 1 tbs Freshzest Dill, Roughly Chopped
  • 1 tbs Freshzest Chives, Roughly Chopped
  • 1kg Red Skin Potatoes
  • 1/3 Cup Sour Cream
  • 1/3 Cup Whole Egg Mayonnaise
  • 1/2 Garlic Clove, Crushed
  • 1/2 tbs Dijon Mustard
  • 1/2 tbs Fresh Lemon Juice
  • Garnish Salt and Pepper

Creamy Herb Potato Salad.


Preparation Time: 5 Minutes

Cooking Time: 20 Minutes

Serving Size: 5-6 Servings

  1. Put potatoes in a large saucepan and cover with water. Place on boil over high heat and cook for 15-20 minutes.
  2. Place Dill, Chives, Sour Cream, Mayonnaise, Garlic, Dijon Mustard and lemon juice in a large mixing bowl and mix well with a spoon or fork. Add salt and pepper to taste.
  3. Strain potatoes off in a strainer. Cut each potato in half and add to the cream mixture. Toss thoroughly. Serve.
