• 2 tblspn Freshzest Parsley, chopped
  • 1/4 cup Freshzest Basil – Green, Finely Chopped
  • 4 x 200g Salmon Fillets
  • 1/4 cup Olive Oil
  • 1 tblspn Lemon Rind, Finely Grated
  • 2/3 cup Whole Egg Mayonnaise
  • 3 tsp Dijon Mustard
  • 2 tblspn Water

Coriander Dressed Salmon With Basil Mayo.


Preparation Time: 15 minutes

Cooking Time: 10 minutes

Serving Size: 4

  1. Place Parsley, oil, lemon rind in a bowl with salt and pepper to taste and mix. Place the Salmon Fillets in a large bowl and pour the mixture over them. Rub the dressing into the Salmon Fillets briefly then cover and place in a fridge for at least 5-10 minutes.
  2. Place Basil, Mustard, Mayonnaise and 2 tablespoons of water in a bowl and mix until combined.
  3. Turn on your Barbecue hot plate or Grill to hot, oil the plate well and place the salmon fillets on the plate. If cooking on a barbecue with a lid, place with skin side down and close lid, cook for 3 or so minutes (to your taste). If cooking on on a hot plate or grill cook for about 3 minutes on each side (also to your taste).
  4. Serve with Basil Mayo and some vegetables or Salad of your choice.
