• 1 Chorizo, diced into 1cm cubes
  • 1 small Tomato, diced
  • 3 eggs
  • A dash milk
  • Salt and pepper , to taste
  • 1/4 cup Freshzest Basil – Green, roughly chopped

  1. Place diced sausage and diced tomato in a frying pan and cook until sausage is golden brown. Remove from pan and place to one side.
  2. Place eggs, milk and salt and pepper in a screw top jar and shake well.
  3. Place the butter in the pan on medium heat and allow to brown.
  4. Pour the egg mixture into the ban. Using a fork pull the edges to the centre and swirl the mixture onto the exposed pan. Place the sausage mixture and basil in a line down the centre of the omelette.
  5. Tip omelette in on itself and roll onto a plate. Serve with bread if desired.
