• 1/4 cup Olive Oil
  • 4 medium Onions, finely chopped
  • To taste Salt
  • 1 Garlic Clove, finely chopped/minced
  • 1 tbs Worcestershire Sauce
  • 2 sprigs Freshzest Thyme - savoury, just leaves
  • 2 cups Plain Greek Yoghurt

Serving Size: Approximately 3 cups

  1. Place oil, onions and a pinch of salt in a medium sized fry pan and fry on a medium heat, sauté until the onions caramelize to a deep brown colour. This may take about 20-30 minutes, but be careful not to burn it, if the moisture runs out small amounts of water can be added to ensure it doesn't burn.
  2. When the onions have caramelized, add garlic and mix through whilst still sautéing. After a minute or two remove from heat, add thyme leaves and mix through. Sit aside for approximately 20 minutes or until cool.
  3. Place onion mix in a mixing bowl, add yoghurt, combine, season with salt to taste and serve.
