• 3 large roma tomatoes
  • 1 crunchy pear
  • 10 cherry bocconcini balls, drained and thinly sliced
  • 1/4 small red onion, finely chopped
  • 1/4 cup Freshzest Basil – Green
  • 2 tbs olive oil
  • 1 tbs balsamic vinegar

Caprese Salad with Basil and Pear.

Serving Size: 4 people

  1. Thinly sliced the tomatoes into circles. Cut pear in half and remove core. Thinly slice pear. Overlap tomato, pear and bocconcini until ingredients are used. Sprinkle onion and basil over salad.
  2. Mix olive oil and vinegar together and drizzle over salad. (Note, using the caramelised vinegar is also nice) Serve.
