• 2 tbs Olive Oil
  • 1kg Beef Fillet's
  • 150ml Red Wine
  • 1/4 cup Port
  • 1 Orange, zested
  • 6 6 Juniper Berries, lightly crushed
  • 4 Freshzest Thyme - savoury
  • 2 cups Veal Glaze, (you can buy this in a good deli)
  • 670g Jar Pitted Bottled Cherries, drained
  • 15g Dark Chocolate, chopped

Rare Beef Fillets with Cherry Chocolate sauce.


Preparation Time: 30 Minutes

Cooking Time: 20 minutes

Serving Size: 4

  1. Place Olive oil in a frypan over a high heat. Lightly salt the beef fillets and add them to the pan, turning, sealing them for about 2-4 minutes on a baking tray and cook in a pre-heated 180 degrees celcius oven for 10 minutes, (longer if you like it less rare). Remove from the oven and set aside, loosely covered for 10 minutes.
  2. In a medium pan, put wine, port, orange zest, juniper berries, thyme and bring it to the simmer. Reduce by half. Add veal glaze, cherries and cook for a further 5 minutes while stirring. Remove the thyme, add chocolate and stir through until melted, season with salt and pepper and remove from heat.
  3. Slice beef and serve with mashed potatoes, green vegetables, cherry sauce and Cranberry bread crumbs.
