• 2 big handfuls Freshzest Parsley - Continental, roughly chopped
  • 1 garlic bulb
  • 1 tbs preserved lemon, chopped
  • 1 tsp salt
  • 1 tsp sumac
  • Juice of 1/2 lemon
  • 3-4 tbs + some to drizzle extra virgin olive oil
  • 700g butter beans
  • 1/2 red onion, thinly sliced

Bean and Red Onion Salad.


Preparation Time: 10 Minutes

Cooking Time: 30 Minutes

  1. Preheat oven to 180 degrees Celsius. Cover the garlic in olive oil and roast for 30 minutes or until soft.
  2. Squash the cloves and mash with the preserved lemon, salt, sumac, lemon juice and oil then mix with the beans, red onion and parsley. Serve.
