• 200gm butter
  • 3 punnets Freshzest Basil – Green
  • 1 clove garlic
  • salt and pepper, to taste
  • a squeeze of lemon juice

Basil Butter.

  1. Soften butter and place in a bowl. Pound garlic and basil leaves in a pestle and mortar, (a food processor can be used) and add to butter. Season with salt and pepper and mix thoroughly. Squeeze in a little lemon juice to taste.
  2. Dampen a piece of parchment paper ( or greaseproof paper) and spoon in the butter to form a cylinder. Roll so the cylinder is the diameter of a 50c piece. Secure the ends by twisting and refrigerate until set. Cut into slices to serve.
  3. Best served sliced on top of BBQ’d chicken, quail or steak. Also excellent on pasta.
