• 1 cup Freshzest Basil – Green, torn
  • 8 eggs
  • 1/2 cup light sour cream
  • 1/2 cup parmesan cheese, finely grated
  • 25g butter
  • 1 bunch asparagus, trimmed and cut into thirds
  • 100g smoked salmon
  • salt and pepper, to season

Basil and Asparagus Frittata.

  1. Preheat oven to 180°C. Place basil, eggs, sour cream and parmesan in a large bowl, season with salt and pepper (to taste) and mix until well combined.
  2. Melt butter in a medium size, ovenproof, nonstick, frying pan (around 24cm) over a medium heat. Place asparagus in pan and saute for roughly a minute. Lay down smoked salmon over asparagus and pour egg mixture over the top, briefly shake the pan to make sure the egg mixture is evenly distributed.
  3. Place the pan into the oven and cook for about 10 minutes or until slightly golden.
  4. Cut and serve, garnished with fresh herbs.
