• 2 stalks Freshzest Lemongrass, chopped (tough outer leaves removed)
  • 1 large onion, chopped
  • 2 cloves of garlic
  • 2 small chillis
  • 750g chicken thigh fillets, diced
  • 400ml coconut cream
  • 4 Freshzest Kaffir Lime Leaves
  • 150g green beans, trimmed
  • 1 tbs sugar
  • 2 tbs fish sauce
  • Freshzest Coriander, to garnish

Quick Thai Chicken Curry.

Serving Size: 4

  1. Blend lemongrass, onion, garlic and chillis in food processor to make a paste, then saute in a little oil until soft.
  2. Add chicken and cook until chicken colours.
  3. Add all other ingredients and simmer for 15 minutes until the chicken is cooked through.
  4. Serve with rice and garnish with chopped coriander or chilli.
