• 1 1/2 tbs rice wine vinegar
  • 1 1/2 tbs caster sugar
  • 1/2 tbs soy sauce
  • 1 tsp sesame oil
  • 1/4 cup olive oil
  • 2 cups Sunrice Mountain Blend Rice
  • 1 Freshzest Long Red Chilli, deseeded and finely chopped
  • 1 Lebanese cucumber, halved lengthways, deseeded and thinly sliced on an angle
  • 4 spring onions, thinly sliced on an angle
  • 1 bunch Freshzest Coriander
  • 2 white flesh peaches, peeled, de-stoned and sliced
  • 20 cooked prawns, frozen or fresh (with fresh (which will also taste better), peel and remove veins)

  1. Place vinegar, sugar, soy sauce and oils together in a bowl and whisk until the sugar dissolves.
  2. Cook the mountain rice blend according to the packet instructions and rinse under cold water when done to cool slightly. Place cooked and slightly cooled rice in a mixing bowl and add remaining ingredients. Serve.
