Sage is native to the sunny Mediterranean and Asia Minor. It has been grown in central Europe since the middle ages. The flavour of sage varies with the particular species but common sage is generally mild and musky with a savoury sweet taste.
Sage helps the body to breakdown fatty and oily foods and therefore is a good partner for pork, goose and duck.
Sage is thought to boost brain function working as an excellent memory enhancer. It is also high in antioxidants and has anti-inflammatory properties.
Selecting - When selecting sage, look for leaves with a vibrant grey-green colour, free of spots.
Storing - Wrap sage in damp (not wet) paper towel and store in a sealed plastic bag or airtight container in the fridge for up to five days.
