Oregano

Origanum vulgare

Great For - pizza, tomato sauces, Greek salad, grilled meat

The warm, slightly sharp flavour of oregano makes it an ideal addition to Mexican and Mediterranean cuisines. Oregano has become a staple in Italian cooking, featuring in everything from pasta sauce, pizza and roasted vegies. It is popular in Greek dishes including souvlaki and Greek salad.
Closely related to marjoram, oregano has a stronger flavour and can be used dried if necessary. Oregano is noted for its potent antioxidant activity but also contains high levels of vitamin K, manganese and iron.
Ancient Greeks believed that cows that grazed on fields of oregano produced tastier meat.

Selecting - Look for bright green leaves with firm stems. The leaves should be free of dark spots and yellowing.

Storing - Fresh oregano can be stored in an airtight container in the fridge for several days. It can also be frozen into ice-cubes or dried for later use.
