Mint
Mentha piperitaGreat For - mint jelly, hot fudge sauce, salad dressing, roast meats
There are many species of mint, but the most popular and commonly found varieties originated in the Mediterranean. Mint has a wonderful refreshing aroma and taste and is one of the most popular flavours in the world. It lends itself equally to both savoury and sweet dishes.
Mint is often used to calm a nauseous stomach but is also rich in traditional nutrients including vitamins A and C and manganese.
In the middle ages, powdered mint leaves were used to whiten teeth!
Selecting - Look for vibrant green, healthy looking stems, free from dark spots and yellowing.
Storing - Wrap in damp (not wet) paper towel and store in a sealed plastic bag or airtight container in the fridge for up to five days. Alternatively pop the stems in a glass of water in the kitchen or refrigerator. Mint can also be frozen into ice-cubes with a little water or oil for later use.
