Kaffir lime leaves are indigenous to Southeast Asia and, as a result, are common in dishes from that region, particularly Thai cuisine. They have a powerful citrus fragrance and a lingering, delicate flavour.
Kaffir lime leaves are an essential ingredient in Thai curry pastes and Indonesian sambals and also work well with fish and seafood dishes, noodles, pork, poultry and rice. The leaves grow in an unusual double form with two leaves on a single stem.

Selecting - Look for vibrant dark green leaves, glossy on the top.

Storing - Kaffir lime leaves can be stored quite easily in the refrigerator in a plastic bag or container for several weeks. They can also be frozen for up to year and still retain their flavour. Drying is not recommended.
